Spring Break Caribbean Escapes

Morro Castle in Old San Juan, Puerto Rico.

By Kathryn Knight Randolph

Puerto Rico Known as the “Island of Enchantment,” Puerto Rico will help you easily forget the piles of homework you left at school. Spring breakers can take in a mix of island urbanism coupled with breathtaking beaches.

Must-do: Puerto Rico’s caves. The Parque de las Cavernas del Rio Camuy contain one of the world’s largest cave networks. You’ll find blue-eyed river crabs, long-legged tarantulas and bats make a visit to the caves each day too.

Must-eat: For a light lunch or afternoon snack, try empanadillas. They are typically deep fried, as is most food in PR, and filled with cheese, meats or seafood. For something a little heavier, get your hands on some lechon asado (barbecue pork) and arroz con gandules (yellow rice with pigeon pea).

Must-see: Old San Juan. If you need a break from the beach for a day, transport yourself back in time to the old city of San Juan. The 16th- and 17th-century architecture is just as jaw-dropping as the crystal clear waters.
